Elaboration

Between 70 and 80% fermentation takes place in stainless steel tanks at 16 ° C, thus obtaining its fruity aroma.

The remaining 30-20% is fermented in American oak barrels, reaching a maximum temperature of 22 ° C.

At the end of the two fermentations, the lees are blended and worked to extract fruit aromas. We will achieve a wine with complexity both in aroma and flavor, in addition to a greater structure in the mouth. This wine has a greater longevity and a differentiating element such as wood.
